Do you guys remember shortly after Jean passed the Breeder's Cup weekend of horse racing was going on and I tried to find a horse that I think she would have picked and settled on "Roy H.".  He won that day.  I just happened to put horse racing on a little bit ago for the first time in months and lo and behold, there was Roy H. running and winning easily.

Maybe Jean is smiling down on us today?  Smile

Dinner tonight - Cod Veracruzana, a salad with a bit of shrimp ceviche, and warm corn tortillas .  The cod is a recipe from Rick Bayless and it smells so good in here.

Tonight is another Chef Benny Doro dinner - Tandoori Salmon.  Benny served it with a cucumber salad very similar to one in C@H several years ago.  I added Cilantro Lime Rice.

The salmon was amazing - perfect for an appetizer.  Next time I will use the same Tandoori paste, but use larger pieces of fish.  As usual, that cucumber salad was so refreshing and perfect with the salmon.

A little late - but what's for dinner?

We smoked two huge boneless pork butts this weekend.  Tonight we'll have some more pulled pork with Carolina Red sauce, Tomato Pie (gluten free crust) and Karin's Spicy Cole Slaw.  

Tomorrow the rest of the pork goes in the freezer!  Burp. Tongue

Rare coastal winter weather here!  Freezing rain coming down now with snow on the way.  Not sure how much accumulation we’ll have, but even the least bit of ice can cause serious problems with power outages.  I know this isn’t that big of an event in most places, but our area isn’t equipped for this kind of weather.  

But I’m ready...lots of propane tanks are full, and dinners for several days are planned.  Tonight is Jeans spaghetti sauce, and French Dips, chili or School House Soup, and Chicken Noodle Soup ingredients are ready for the next few days.  We’ll be warm and cozy with comfort food ready to go!  Stay safe and warm for those of you in the sights of this storm!

Hey! l Where is everyone!!! I know it's the week before Christmas, but people still have to eat! Big Grin

Tonight is Alyssa's orchestra concert. (she plays violin) So, I wanted to have something prepared, because I have to go pick up my dad and bring him over. This morning, I made beef, barley, and vegetable soup. Last night I started 18 hr. no-knead bread that will go in the oven in a bit.

Only one more batch of nut horns and my Christmas baking will be done! Yay!

It's COLD and snowing here, so comfort food tonight. Meatloaf, mashed potatoes, gravy and frozen mixed veggies. One of Ron's favorite meals.
